Seafood Vera Cruz
Seafood Vera Cruz is an impressive dinner. Made with 4 fish fillets (flounder, cod, etc.), 4 peeled, chopped tomatoes (can use canned), 1 large diced onion, 1 julienned green pepper and 2 tbsp. tomato paste, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Place fish fillets in Pyrex dish; salt and pepper to taste. Add lemon juice and Worcestershire sauce; allow to marinate while preparing vegetables.
Saute onion in olive oil until golden.
Add tomatoes, pepper, garlic, capers, black olives, tomato paste and chopped parsley.
Cover; cook for 10 minutes.
Top fish with this mixture.
Bake at 350Β° for 10 minutes per inch of thickness of fish.
