Scarpinocc
Scarpinocc are Bergamasque stuffed pasta shaped like little shoes, filled with breadcrumbs, cheese, herbs, and nutmeg, then dressed simply with browned butter, sage, and grated Grana.

Stir breadcrumbs, cheese, egg, milk, garlic, nutmeg, salt, and pepper into a moist filling.
Roll the pasta dough thinly and cut it into small rounds.
Place filling on each round, fold, and pinch into the curved scarpinocc shape.
Boil the pasta in salted water until tender and floating.
Toss with browned butter and sage, then finish with more grated cheese.
