Scalloped Rhubarb
Scalloped Rhubarb is an moderately easy dinner. Made with 2 to 3 c. bread, cut in 1/2-inch cubes (whole wheat may be used), 3 to 4 tbsp. melted margarine, 2 to 3 c. diced fresh or frozen rhubarb (thaw if using frozen), 1/2 c. raisins and 1/3 c. firmly packed brown sugar, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

In a medium bowl, toss bread cubes with margarine.
Add rhubarb, sugar and raisins; mix gently.
Turn mixture into a 1 1/2 quart casserole sprayed with nonstick coating.
Pour water over mixture.
(Amount of water depends on dryness of bread and moistness of rhubarb.)
Bake at 325Β°, covered, about 45 minutes or until slightly bubbly.
Serve with roast beef, pork, lamb, chicken or turkey.
