Scalloped Eggplant
Scalloped Eggplant is an moderately easy dinner. Made with 1 eggplant, diced, 1 green pepper, chopped, 1 qt. chopped tomatoes, 4 tbsp. butter and 1 1/2 c. bread crumbs, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Preheat oven to 350Β°.
Pare eggplant and dice.
Melt 2 tablespoons butter in skillet.
Add green pepper and onion. Cook on low for a few minutes.
Add tomatoes, eggplant, salt and black pepper.
Cook 10 minutes.
Place in shallow greased dish. Melt 2 tablespoons butter; stir in bread crumbs and sprinkle over eggplant.
Bake until crumbs are brown, 15 to 20 minutes.
