Scalloped Carrots
Scalloped Carrots is an moderately easy dinner. Made with 4 c. peeled sliced carrots, 1 medium onion, chopped, 3 tbsp. butter, 1 can cream of celery soup and 1/2 tsp. salt, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Cook carrots in salted water and drain.
Meanwhile, cook onions in butter until soft.
Stir in soup, salt, cheese, pepper and carrots.
Place in 2-quart casserole dish.
Toss bread stuffing with 1/2 cup melted butter.
Spoon over carrots and bake at 350Β° about 30 minutes or until bubbly and hot.
(I use 2 extra ribs of celery, cut and cooked with carrots because I like celery.)
