Savory Squash
Savory Squash is an moderately easy dinner. Made with 1 1/2 lbs. yello squash or zucchini, sliced, 1/2 c. chopped onions, 3 c. cooked rice, 2 c. grated cheddar cheese and 1 tsp. seasoned pepper, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Cover and cook squast and onions in a small amount of water until squash is tender.
Combine with rice, cheese, and seasonings.
Blend eggs and mayonnaise; stir into vegetable mixture.
Turn into a buttered shallow 2-quart casserole dish.
Top with bread crumbs. "I use Italian Style." Bake at 350Β° for 30 minutes.
