Sauteed Potato Cubes
Sauteed Potato Cubes is an moderately easy dinner. Made with 6 medium potatoes (1 1/2 lb.), peeled and cut into 1/2-inch cubes (about 3 c.), salt to taste, water, 1/3 c. oil and fresh ground pepper to taste, this recipe delivers authentic, satisfying flavors. In saucepan, bring to boil the potatoes and enough salted water to cover.
Reduce heat; simmer for about 2 minutes.
Drain. In skillet, heat oil.
Add potatoes.
Season with salt and pepper. Cook, shaking skillet occasionally and stirring gently, about 10 minutes or until potatoes are nicely browned.
Drain in colander. Return to skillet; add butter.
Over high heat, toss potatoes about 5 minutes.
