Sausage-Grits Soufflé
Sausage-Grits Soufflé is an moderately easy dinner. Made with 1 lb. hot sausage, 1 c. quick grits, 6 to 8 eggs, well beaten, 1 1/2 c. milk and salt and pepper to taste, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Stir-fry sausage until cooked and brown.
Drain well; set aside.
Cook grits in a large Dutch oven according to package instructions.
Combine eggs, milk, salt and pepper.
Slowly stir into grits.
Add margarine and 1 1/2 cups of cheese, stirring until cheese melts.
Add sausage; mix well.
Bake in 3-quart round casserole at 350° for 1 to 1 1/2 hours.
Sprinkle remaining 1/2 cup cheese on top; return to oven just until cheese melts.
Serves 10 to 12.
