Sauerkraut Relish
Sauerkraut Relish is an moderately easy dinner. Made with 3 (1 lb.) bags sauerkraut, 1 medium size green pepper, 1 medium size red pepper, 1 (16 oz.) bottle cider vinegar and 1 (16 oz.) pkg. light brown sugar (2 1/4 c.), packed, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

One day or up to 1 week ahead, rinse sauerkraut by running under cold water. Drain well. Dice red and green peppers.
In a large bowl, stir sauerkraut, peppers, cider vinegar, brown sugar and caraway seed until mixed.
Cover with plastic wrap and refrigerate overnight. Store in refrigerator.
Makes about 8 cups.
