Salmon Soufflé
Salmon Soufflé is an moderately easy dinner. Made with 1/2 c. milk, 2 tbsp. margarine, melted, 4 slices bread, torn into pieces, 1 (15 1/2 oz.) can salmon, drained and flaked and 2 eggs, separated, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Mix milk, margarine and bread; stir in salmon, egg yolks, lemon juice, onion, salt and pepper.
Beat egg whites in a large bowl until stiff; fold in salmon mixture.
Pour into greased 1 1/2 quart casserole.
Bake uncovered in 350° oven for 1 hour or until puffs and turns golden.
Makes 6 servings.
