Salmon Loaf
Salmon Loaf is an impressive dinner. Made with 2 (1 lb.) cans salmon, 1 large onion, 4 stalks celery, 1/4 c. butter and 1/2 lb. mushrooms, sliced, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Flake the salmon, reserving liquid.
Chop onion and celery; saute in butter about 10 minutes.
Add mushrooms and saute another 5 minutes.
Combine cooked vegetables with bread crumbs.
Add salmon, liquid, salt, pepper, parsley, lemon rind and lemon juice. Beat eggs lightly and add to salmon mixture with the milk.
Put salmon mixture in a large, greased loaf pan and bake at 375Β° for 50 minutes.
6 to 8 servings.
