Saffron Rice Supreme
Saffron Rice Supreme is an moderately easy dinner. Made with 1/3 c. almonds, blanched, 1 1/2 tsp. coriander (whole), 1 1/2 tsp. cumin (whole), 1/2 c. yellow raisins and 1/2 tsp. saffron threads, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Split each almond into 2 halves.
Using mortar and pestle, crush the cumin, coriander and saffron together.
Soak the raisins in hot water for a few minutes and drain.
Saute all of these ingredients for a few minutes in the butter.
Add the cooked rice and toss to color the rice and coat each grain with butter.
Add salt and freshly ground pepper to taste.
