Rum Raisin Cheddar Crock
Rum Raisin Cheddar Crock is an easy dinner. Made with 1 c. raisins, 1/3 c. rum (light or dark), 2 c. sharp cheddar cheese, shredded (at room temperature) and 6 oz. cream cheese (at room temperature), this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Soak raisins in rum for 1 hour.
In medium bowl, beat the cheese until fairly smooth (or process in blender or food processor). Add raisins and rum and beat or whip briefly to blend and to chop raisins slightly.
Pack into container and store in refrigerator. Serve with crackers, raw vegetables and fruits. Yields 1 1/2 cups.
