Ruffins Fish
Ruffins Fish is an easy dinner. Made with any kind of fish fillet, 3/4 to 1-inch thick, 1/3 stick margarine, 1/4 c. dry white wine and 1/4 c. parmesan cheese, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Preheat oven to 500Β°.
Place margarine in Pyrex dish and put in oven until melted and browned. Salt and pepper fish.
Place fish, flesh down, in margarine.
Cook approximately 10 minutes. Turn fish over and pour mixture of wine and lemon juice on fish. Then cover with Parmesan cheese.
Broil for 5 to 10 minutes.
