Rocky Mountain Cake
Rocky Mountain Cake is an moderately easy dinner. Made with 1 c. butter, softened, 2 c. sugar, 8 egg whites, 3 c. flour and 2 tsp. baking powder, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Cream butter and sugar in large mixer bowl until light and fluffy.
Add egg whites 1 at a time, beating well after each addition.
Mix flour and baking powder in bowl; mix well.
Add to egg white mixture alternately with milk, beating well after each addition.
Stir in almond extract.
Pour into 4 greased and floured 8-inch round cake pans.
Bake at 350Β° for 25 to 30 minutes or until cakes test done.
Remove to wire racks to cool.
Spread frosting between layers and over top and side of cake.
