Rock Cornish Hens
Rock Cornish Hens is an moderately easy dinner. Made with 3 c. water, 1 tsp. salt, 1 c. wild rice, 1/2 c. butter and 2 tbsp. finely chopped onions, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Bring water to a boil.
Wash rice several times and add to boiling water.
Cover and simmer for 1 hour without stirring until tender; drain if necessary.
Melt 1/2 cup butter.
Saute onions and mushrooms in melted butter until lightly browned.
Toss lightly with wild rice and American cheese.
Rinse hens with water and pat dry.
Rub cavity with salt.
Fill lightly with wild rice mixture.
To close cavity, sew or skewer and lace with cord.
Tie legs together.
Brush with 1/3 cup melted butter.
Roast, uncovered, at 350Β° for 1 hour or until done.
Serves 6.
