Rice Torta
Rice Torta is an moderately easy dinner. Made with 1 c. rice (dry, not cooked), 4 eggs, 1 medium zucchini, chopped, 1/4 to 1/2 onion, chopped and 1/3 c. fresh parsley, chopped, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Cook rice as directed on package.
Saute onion, zucchini and parsley in butter.
Mix all ingredients together.
Oil a 9 x 13-inch pan with olive oil.
Pour rice mixture in pan.
Bake at 350Β° for 1/2 hour or until top is golden brown.
Cut into squares.
(Will firm up as it cools.)
Serve as appetizers or side dish.
