In a 9-inch square baking dish or a shallow 2 or 3-quart casserole dish, combine milk, rice, sugar, vanilla and nutmeg. Cover and bake in a 300Β° oven until thick and light golden in color (about 3 hours), or bake pudding, uncovered, and an amber, caramel flavored skin will form on top.

Serve pudding warm.

Makes 4 to 6 servings.
