Rice Pudding
Rice Pudding is an moderately easy dinner. Made with 1 c. uncooked rice, 3 3/4 c. skim milk, 1/3 c. raisins, 1/4 c. sugar and 1/8 tsp. salt, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

In a 3-quart pot, bring rice, milk, raisins, sugar and salt to a boil.
Reduce heat to low. Cover and cook 25 minutes or until rice is tender.
Slowly stir in vanilla and cinnamon.
Add a dash of nutmeg and stir until well mixed.
Serve with milk for a thinner consistency.
