Rhubarb Bread
Rhubarb Bread is an moderately easy dinner. Made with 3 eggs, 1 c. salad oil, 2 c. brown sugar, 2 tsp. vanilla and 2 1/2 c. finely diced rhubarb, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

In large bowl, mix eggs, salad oil, brown sugar and vanilla. Beat until thick and foamy.
Stir in rhubarb and walnuts.
In separate bowl, combine flour (or use 1 1/2 cups each white and whole wheat flour), soda, cinnamon, salt, baking powder, nutmeg and allspice.
Mix dry ingredients into rhubarb mixture with spoon.
Spoon into 2 greased and floured loaf pans and bake at 350Β° for 1 hour.
