Refrigerator Cookies
Refrigerator Cookies is an moderately easy dinner. Made with 1 c. soft shortening, 1/2 c. white sugar, 1/2 c. brown sugar, packed, 2 eggs and 2 3/4 c. sifted flour, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Mix thoroughly shortening, sugars and eggs.
Sift together and stir in the flour, soda, salt and cinnamon.
Mix thoroughly. Press and mold into a long smooth roll, about 2 1/2 inches in diameter.
Wrap in waxed paper and chill until stiff (several hours or overnight).
With a thin sharp knife, cut into thin slices (1/8 to 1/4-inch).
Place slices a little apart on ungreased baking sheet.
Bake until lightly browned.
Bake at 400Β° for 6 to 8 minutes.
Makes 6 dozen 2 1/2-inch cookies.
