Reduced Calorie Apple Pie
Reduced Calorie Apple Pie is an easy dinner. Made with 3 c. cooked apples, 1 c. apple juice, 2 tsp. apple pie spice, 2 tsp. knox gelatin and 2 packets sugar substitute, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Drain apples and place in diet crust.
In 1/4 cup apple juice, sprinkle Knox gelatin and let set 1 minute.
Heat on High in microwave until dissolved about 1 minute.
Add remaining apple juice to dissolved mixture.
Stir in spice and sweetener.
Place over ice water and stir until mixture starts to thicken.
Pour over apples.
Chill until firm.
