Red Onion Soup

Slice onions.
Melt 3 tablespoons of the butter in a large pan.
Add onions and 1 teaspoon salt.
Cook over medium-low heat, stirring occasionally, until golden, 30 to 40 minutes.
Add wine and cook 5 minutes.
Add stock and thyme.
Cook 15 minutes. Season to taste with salt and pepper.
