Red Beans and Rice
Red Beans And Rice is an impressive dinner. Made with 1 lb. dried red pinto beans, 2 qt. cold water, 1 ham hock or sliced ham, 1/2 lb. hot sausage, sliced thick and 1 bunch green onions, chopped, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Rinse beans.
Put in a big heavy 3-quart pot; add water, ham and sausage.
Cook uncovered.
Add chopped onion, celery, green pepper, thyme and bay leaves.
Bring to a boil.
Reduce heat and cover.
Stir often.
Season to taste with hot pepper, salt and black pepper.
Cook until beans are done.
Serve over cooked rice.
