Rancho California Rice
Rancho California Rice is an moderately easy dinner. Made with 1 c. onions, chopped, 4 tbsp. butter, 4 c. rice, cooked, 2 c. sour cream and 1 c. cottage cheese, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
In large skillet saute onions in butter.
Add rice, sour cream, cottage cheese, bay leaf, salt and pepper.
Mix together.
In a greased casserole put a layer of rice, then a layer of canned green chilies (unseeded and cut in strips) and 1/2 cup grated cheese, alternately (use total of 1 1/2 cups cheese in layers).
Repeat ending with layer of rice.
Bake for 25 minutes in 375Β° oven. Remove, sprinkle remaining cheese over top and return to bake 10 minutes longer.
