Raisin Cake
Raisin Cake is an moderately easy dinner. Made with 1 lb. seedless raisins, washed, 2 c. water, 1 c. shortening, 2 c. sugar and 4 c. flour, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Simmer raisins and water 10 to 15 minutes; allow to cool. Cream shortening and sugar.
Add cooled raisins and mix.
Add dry ingredients alternating with coffee; mix well.
Pour into greased and floured tube pan.
Bake at 325Β° for 1 hour or until tester comes out clean.
Cool in pan about 10 minutes, then invert to plate or rack.
When cooled, sprinkle with powdered sugar or drizzle with thin icing or serve plain.
