Quick Vegetable Soup is an easy dinner. Made with 1 (16 oz.) pkg. frozen mixed vegetables, 1 (1 oz.) envelope onion soup mix, 1 (46 oz.) can v-8 juice, 1 lb. lean ground beef and 2 bouillon cubes or 2 tbsp. (beef), this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Combine first 3 ingredients in a heavy pan; bring to a boil. Cook beef until crumbled and brown.
Stir into vegetable mixture and add bouillon.
Reduce heat and simmer at least 20 minutes or longer.
Yields 2 quarts.
May be frozen.
