Quail and Hazelnut Sauce

Grind hazelnuts in blender.
In processor, blend molasses and butter.
Chill for 1 hour.
Season and tie quail to hold in shape. Saute quail in 2 ounces of butter.
Start with breast side down, turning to brown all sides.
Finish in oven for 5 minutes at 450Β°. Remove quail; drain and add hazelnut butter to thicken.
Season with salt and pepper.
