Pumpkin Shell Casserole
Pumpkin Shell Casserole is an moderately easy dinner. Made with 1 small pumpkin shell, 2 c. peeled chopped apples, 1 c. raisins, 1 c. chopped pecans and 1/3 c. sugar, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Preheat oven to 350Β°.
Wash and dry pumpkin (approximately 7-inches in diameter; you can use larger, but it takes longer to cook and you may have trouble removing it from cookie sheet.)
Fill pumpkin with two parts apples, one part raisins and one part pecans.
Add sugar to taste.
Add lemon juice, cinnamon and nutmeg. Mix well.
Return lid to pumpkin.
Place pumpkin on a cookie sheet. Bake until apples are tender.
Begin checking after 40 minutes, but it may take up to 1 hour and 45 minutes longer.
This casserole may be served hot or cold.
Serve from the shell, spooning some pumpkin with each portion.
Top with sour cream if desired.
Serves 6 to 8.
