Pumpkin Cake
Pumpkin Cake is an moderately easy dinner. Made with 2 c. sugar, 1 1/4 c. vegetable oil, 1 1/2 c. pumpkin purée, 4 eggs and 3 c. flour, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Place sugar, oil and pumpkin in large mixer bowl and beat well at medium speed.
Add eggs one at a time, beating well after each. Sift flour, baking powder, soda, cinnamon and salt together and fold into batter.
Stir in nuts and raisins.
Pour into greased and floured 10-inch tube pan.
Bake at 350° for 1 1/4 hours or until done.
Do not open oven door under 1 hour.
Let cool slightly in pan before turning onto cake rack.
