Pumpkin Bread (Caribbean)
Pumpkin Bread (Caribbean) is an impressive dinner. Made with 2 c. fresh or canned pumpkin purée, 3 c. packed brown sugar, 1 c. corn oil, 4 eggs (room temperature) and 2 tsp. vanilla, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Beat together brown sugar and oil.
Add eggs, one at a time, and after each addition.
Vanilla extract. Sift all dry ingredients together and beat into the batter gradually, alternating with the coconut until smooth. Stir in pumpkin purée with a wooden spoon and fold in nuts.
Pour into 3 greased and floured loaf pans on middle rack of 350° oven until bread tests done.
Cool in pans on rack for about 30 minutes, then unmold on cool completely.
Good warm with butter.
