Pumpernickel Bread
Pumpernickel Bread is an moderately easy dinner. Made with 1/2 c. cornmeal, 1/2 c. water, 2 c. cooked, mashed potatoes, 1/2 c. molasses and 2 tbsp. butter, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Mix and cook corn meal and 1/2 cup water.
Dissolve yeast in 1/2 cup water.
To the corn meal, add potatoes, molasses, butter, salt, sugar and yeast.
Combine flours.
Add flour to mixture and work dough until it no longer sticks to your hands.
It may take more or less flour.
Divide into thirds.
Place in 3 greased pans. Bake 45 minutes to 1 hour at 375Β°.
Best in round pans.
