Progressive Farmer Fruit Cake
Progressive Farmer Fruit Cake is an moderately easy dinner. Made with 1 pkg. yellow cake mix, 4 eggs, unbeaten, 1 tsp. orange juice or extract, 1/2 lb. candied green pineapple, cut in narrow strips and 1/2 lb. red candied cherries, chopped, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Empty cake mix into bowl and add applesauce, eggs, salt and juice.
Beat 3 minutes or until creamy and smooth.
Combine fruits and nuts and dredge them in the flour.
Stir into the batter.
Line 2 (8 x 4 x 3-inch) loaf pans with a triple thickness of waxed paper and grease well.
Pour batter into pans and bake at 275Β° for 2 hours and 45 minutes.
Cool cakes on a rack until thoroughly cool. Remove from pans leaving paper attached to cakes.
Wrap cakes in aluminum foil and refrigerate or freeze until ready to use.
Yields 2 large or 4 small loaves.
