Potato Yeast Rolls
Potato Yeast Rolls is an moderately easy dinner. Made with 1 stick + 3 tbsp. oleo, 2 c. water, 2/3 c. sugar, 1 tsp. salt and 2 eggs, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

In a large bowl, pour one cup boiling water over oleo.
When nearly melted, add 1 cup warm water, sugar, salt and eggs.
Stir well.
Sprinkle yeast over mixture.
Let set a few minutes to dissolve.
Add mashed potatoes.
Add flour, 1 cup at a time, beating with mixer.
Will have to mix the last 2 or 3 cups of flour with a spoon.
Put dough in refrigerator overnight.
Punch dough down several times until it gets cold.
Pinch off dough and form into rolls.
Bake at 400Β° for 12 to 14 minutes.
