Potato Soup
Potato Soup is an moderately easy dinner. Made with 2 c. peeled potatoes, cut into 1/4-inch cubes, 2 medium onions, thinly sliced, 2 tbsp. butter, 6 c. hot water or chicken or beef consomme and salt, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Combine potatoes, onions and butter in casserole.
Cook, covered, over lowest possible heat for about 4 minutes or until potatoes are almost cooked.
Stir frequently.
If necessary, add 1 to 2 tablespoons hot water or consomme to prevent scorching.
Add rest of the hot water or bouillon.
Season with salt and pepper. Simmer, covered, for 5 to 10 minutes or until potatoes are cooked. Sprinkle with bacon and parsley.
