Potato Skins
Potato Skins is an moderately easy dinner. Made with 6 medium potatoes, salt and pepper, sour cream, guacamole and chopped green onions, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Wash and scrub skins of medium sized potatoes.
Bake in oven or microwave until tender but not mushy.
Quarter each potato, cutting lengthwise, then carefully remove all but about 1/4-inch of the potato, leaving the skin intact.
Place skins on baking tray or cookie sheet.
Brush skins with melted margarine; sprinkle with salt and pepper.
Bake in oven at 450° for 15 to 20 minutes. Sprinkle with grated Cheddar cheese.
Return skins to oven until cheese melts.
