Potato Croquettes
Potato Croquettes is an moderately easy dinner. Made with 2 lb. potatoes, boiled and riced, a little grated onion, 1 egg, milk, butter and pepper and 1 c. dry bread crumbs, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Mash potatoes with milk and butter, but leave stiff.
Add pepper and onion.
Cool to room temperature.
Measure 1/3 cup portions; shape into cones.
Roll in bread crumbs, then in egg which has been beaten with water.
Place on greased cookie sheet; store in refrigerator.
Twenty minutes before serving, bake in a 400Β° oven for 15 minutes, or until brown and crusty.
