Potato Collops
Potato Collops is an moderately easy dinner. Made with 3 medium potatoes, 1 large onion, salt and pepper to taste, 2 tsp. chopped parsley and 1/4 lb. raw bacon, diced (to be omitted on fast days), this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Pare potatoes and cut into very thin slices.
Chop onion. Place a layer of vegetables in a greased baking dish.
Sprinkle with seasonings, parsley and diced bacon (rind removed), and dot with butter.
Repeat layers until all ingredients are used, finishing with potatoes.
Pour in milk and sprinkle top with grated cheese.
Cover and bake in preheated moderate oven (350Β°) for 45 minutes.
Uncover and continue cooking until potatoes are done and top layer is brown.
Makes 4 servings.
