Potato Chip Cookies
Potato Chip Cookies is an moderately easy dinner. Made with 3/4 c. margarine, softened, 3/4 c. sugar, 1 egg yolk, 1 tsp. vanilla and 1 1/4 c. all-purpose flour, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Preheat oven to 375Β°. In large mixing bowl, cream margarine, sugar, egg yolk and vanilla until light and fluffy.
Add flour, potato chips and chopped nuts.
Form into 1 1/2-inch balls and place 3-inches apart on ungreased cookie sheets.
Grease bottom of a glass about 3-inches in diameter.
Dip greased glass into sugar and use to flatten each ball.
Place nut half in center of each cookie.
Bake 8 to 10 minutes.
Cool slightly before removing from cookie sheets.
Then cool on wire racks.
Makes 2 1/2 dozen.
