Potato Asparagus Soup
Potato Asparagus Soup is an moderately easy dinner. Made with 10 1/2 oz. cut asparagus, 1/3 c. chopped onion, 1 tbsp. margarine or butter, 1 c. water and 2 chicken bouillon cubes, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Drain asparagus; reserve liquid.
In medium pan, saute onion and margarine.
Stir in reserved asparagus liquid, water and bouillon.
Bring to a boil.
Reduce heat; simmer uncovered for 5 minutes.
Remove from heat; stir in potatoes.
Blend well.
Add asparagus, half and half, dill and pepper.
Return to heat.
Heat slowly.
Stir frequently.
