Portuguese Soup
Portuguese Soup is an moderately easy dinner. Made with 2 c. chopped onion, 3 cloves garlic, minced, 6 tbsp. oil, 1 lb. garlic flavored smoked pork sausage, cut into bite size pieces and 10 c. beef stock, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Saute onion and garlic in oil just until transparent. Add sausage and brown lightly. Add beef stock and all other ingredients.
Bring to a boil, stirring often. Reduce heat. Simmer for 45 minutes or more, stirring occasionally.
Makes 1 gallon plus.
