Cut meat into large cubes, well trimmed.
Put meat, onions and seasonings in heavy casserole and simmer, tightly covered, turning occasionally until meat browns.
Dust with flour.
Add soup stock, tomato purΓ©e and the parboiled potatoes.
Cover and continue to simmer until meat and potatoes are done.
