Pork Chop Neapolitan
Pork Chop Neapolitan is an moderately easy dinner. Made with 6 loin pork chops (3/4-inch thick; 2 lb.), 2 tbsp. olive oil, 1 c. chopped onion, 1 clove garlic, crushed and 1 (1 lb.) can italian tomatoes (undrained), this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Wipe chops with damp paper towel.
In hot oil in large skillet, brown chops well on both sides.
Remove from skillet.
Drain all but 1 tablespoon drippings from skillet.
Add onion and garlic; saute until tender (about 5 minutes).
Add tomatoes, salt, oregano, basil and pepper; mix well, mashing tomatoes with fork.
Place pork chops in skillet.
Arrange green pepper and mushrooms between chops.
Simmer, covered, for 1 1/4 hours or until chops are tender. Makes 6 servings.
