Porcupine Meatballs
Porcupine Meatballs is an moderately easy dinner. Made with 1 lb. ground meat (veal, beef or pork), 1 onion, chopped, 1/4 tsp. powdered sage, 1/4 c. rice, boiled in water or beef stock and 1 egg, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Chop onion.
Brown in small amount of butter, 1/4 teaspoon powdered sugar, pinch of oregano and salt and pepper to taste.
Add 1/4 cup rice (which has been brought to a boil in water or beef stock).
Form the ingredients into balls and arrange in a shallow casserole dish.
Add 1 can of water.
Bake in moderate oven until done.
These meatballs are delicious served with Au Gratin potatoes, Brussels sprouts and a fruit salad.
