Polynesian Chicken
Polynesian Chicken is an moderately easy dinner. Made with 1 1/2 lb. boneless chicken, 2 tbsp. oil, 1 (16 oz.) can pineapple chunks, 2 tbsp. sugar and 2 tbsp. cornstarch, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Drain pineapple in measuring cup; add water to make 2/3 cup and set aside.
Cut chicken in strips; brown in oil.
Stir into reserved liquid, sugar, cornstarch, vinegar, soy sauce, ground ginger and garlic powder.
Pour liquid into skillet with chicken. Add frozen vegetables and pineapple.
Bring to boil; simmer for 5 minutes.
Serve over cooked rice.
