Polish Dumplings
Polish Dumplings is an moderately easy dinner. Made with 1 lb. small curd creamed cottage cheese, 2 eggs, 1 tsp. salt, 2 tbsp. melted butter and 1 c. cooked, mashed potatoes, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Mix first 5 ingredients together in mixer on medium speed and then finish by hand.
Add flour, working with wooden spoon and then with hands, until about 4 1/2 cups are added.
Break off apple-size (small) chunks of dough.
Flour hands and start rolling dough between hands to form a rope, then cut off pieces with a paring knife about 1-inch long, dropping them onto a floured cookie sheet.
Then flour hands and proceed to roll each of these pieces between palms of hands to look like "little fingers." Place these on a floured cookie sheet.
Continue with the rest of the dough.
