Polish Biga's(Polish Sausage and Sauerkraut)
Polish Biga'S(Polish Sausage And Sauerkraut) is an moderately easy dinner. Made with 1 large can sauerkraut or 1 qt. jar, drained, 3 c. water, divided, 1/2 tsp. caraway seed, 1 tbsp. sugar and 1/2 c. yellow split peas (soak 1 hour), this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Drain sauerkraut and add 2 cups water, caraway seed and sugar. Boil 10 minutes.
Soak yellow split peas for 1 hour in 1 cup cold water.
Boil until thick; add to sauerkraut.
Saute onions in 2 tablespoons butter; add to sauerkraut mixture.
Season with pepper.
Set aside.
Boil sausage for 1 hour in a little water. Take out and brown slightly in butter.
Cut into 8 pieces and arrange on top of the sauerkraut.
Serve with whole small potatoes, topped with fresh butter and dill.
