Made with 8 to 10 potatoes, boiled in jackets, 1 lb. cheddar cheese, cut into cubes, 1/2 c. chopped onion, 1 small jar red pimento and 2 sticks margarine, melted, this recipe delivers authentic, satisfying flavors. Dice potatoes, leaving some skin on.

Sprinkle cubed cheese on top.

Set aside.

Cook onion slightly in margarine.
