Pocatilla Potatoes
Pocatilla Potatoes is an moderately easy dinner. Made with 8 to 10 potatoes, boiled in jackets, 1 lb. cheddar cheese, cut into cubes, 1/2 c. chopped onion, 1 small jar red pimento and 2 sticks margarine, melted, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Dice potatoes, leaving some skin on.
Sprinkle cubed cheese on top.
Set aside.
Cook onion slightly in margarine.
Add potatoes with pimento, cheese, bread cubes, onion and seasonings. Do not melt cheese completely, you want them chunky.
Toss, sprinkle with parsley and bake at 350Β° until cheese starts to melt.
I use a 9 x 13-inch glass pan.
