Pineapple Upside-Down Cake
Pineapple Upside-Down Cake is an moderately easy dinner. Made with 1/2 stick butter or margarine, 1/2 c. brown sugar, 4 or 5 slices pineapple or 1 (no. 2) can crushed pineapple, 1 c. sugar and 1 c. self-rising flour, this recipe delivers authentic, satisfying flavors. Preheat oven to 350Β°.
Melt butter and brown sugar in a 9 x 9 x 2-inch skillet.
Beat sugar and egg yolks until light.
Blend alternately with the pineapple juice and flour.
Beat egg whites and fold in.
Place pineapple (and cherries and pecans, if desired) in the melted butter and sugar in skillet.
Pour batter over this.
Bake for 30 to 40 minutes, until tester inserted in center comes out clean.
Cool for a few minutes, then invert skillet onto cake plate.
